dc.description.abstract | En este artículo se describe la manera en que se ha preparado el chocolate a partir de su creación en la época de los antiguos mexicanos. Se mencionan los condimentos que se le han agregado, tanto los originarios de Mesoamérica, como los venidos de fuera: achiote, yoloxóchitl o flor de magnolia, tlilxóchitl o vainilla, chile y canela. Se aportan datos acerca de los utensilios que han estado ligados a esta bebida de cacao, como son el metate, el molinillo, las jícaras, las mancerinas y las chocolateras y jarros. También sobre las mezclas de cacao mexicano y venezolano que se usaron en la etapa colonial y en el siglo XIX. Se hace una selección de bebidas hechas con cacao, muchas de las cuales tiene además maíz. Es el caso del champurrado, el pozol y la tanchuca. dc.description.abstract | In this article the preparation of chocolate is described starting from the original methods developed by the ancient inhabitants of Mesoamerica. Different spices that have been incorporated to chocolate are mentioned, including those brought from abroad: achiote, yoloxochitl, flor de magnolia, tlilxóchitl also known as vanilla, hot pepper and cinnamon. Information concerning the different instruments that have been associated to chocolate elaboration is described: this is the case of metate (grounding stone), molinillo (a wood hand mixer), jícaras, mancerinas, chocolateras and jarros (all terms referring to different type of jars used to store and conserve chocolate). The article also describes the mixtures of cacao from México and Venezuela, that were common during colonial times and the XIX century. A selection of beverages prepared with chocolate are described, particularly those that include corn. This is the case of champurrado, el pozol y la tanchuca.
